Ingredients

  • 4 whole red bell peppers
  • 500 grams ground beef
  • 2 tablespoons olive oil
  • 1 medium, finely chopped onion
  • 3 minced garlic cloves
  • 2 tablespoons tomato paste
  • 400 grams canned diced tomatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cooked white rice
  • 1 cup shredded cheese (optional)
  • 2 tablespoons, finely chopped fresh parsley
  • 0.25 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the red bell peppers and remove the seeds and membranes. Set the tops aside for later.

Step 3

In a large skillet, heat the olive oil over medium heat.

Step 4

Add the finely chopped onion and minced garlic. Sauté until translucent, about 3-4 minutes.

Step 5

Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned and no longer pink, about 5-7 minutes.

Step 6

Stir in the tomato paste, canned diced tomatoes, smoked paprika, ground cumin, dried oregano, salt, and black pepper. Cook for another 5 minutes to allow the flavors to meld.

Remove the skillet from heat and stir in the cooked white rice and chopped parsley.

Place the reserved tops of the peppers back on as lids.

Remove the foil and bake for an additional 10 minutes to allow the tops to brown slightly.

Remove from the oven and let cool slightly before serving.

Step 15

Garnish with additional fresh parsley, if desired.
