Ingredients

  • 500 g Ground beef (or lamb)
  • 2 tbsp Olive oil
  • 1 large Onion, diced
  • 2 medium Carrots, diced
  • 2 medium Celery stalks, diced
  • 200 g Frozen peas
  • 2 cloves Garlic, minced
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 250 ml Beef or chicken stock
  • 2 tbsp All-purpose flour
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 800 g Potatoes, peeled and chopped for mashing
  • 50 g Butter
  • 100 ml Milk
  • 100 g Cheddar cheese, grated
  • 1 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a large pot of salted boiling water, cook the potatoes until tender, about 15-20 minutes. Drain and set aside.

While the potatoes are cooking, heat olive oil in a large skillet or saucepan over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5-7 minutes, until softened.

Add the minced garlic and cook for an additional minute until fragrant.

Stir in the ground beef (or lamb) and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat if necessary.

Add the tomato paste, Worcestershire sauce, salt, pepper, and flour to the pan. Stir well to coat the meat and vegetables evenly.

Pour in the beef (or chicken) stock and bring the mixture to a simmer. Reduce the heat and cook for 10-15 minutes until the sauce thickens. Stir in the frozen peas and remove from heat.

While the meat mixture is cooling, mash the drained potatoes with butter and milk in a bowl. Season with salt and pepper to taste. Stir in half of the grated cheddar cheese.

Transfer the meat and vegetable mixture to a baking dish, spreading it out evenly. Top with the mashed potatoes, spreading them out smoothly to cover the filling completely.

Sprinkle the remaining cheddar cheese on top of the mashed potatoes.

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling.

Remove from the oven and let sit for 5 minutes before serving. Garnish with chopped parsley, if desired.
