Ingredients

  • 8 Flour tortillas
  • 8 slices Smoked turkey breast
  • 8 slices Provolone cheese
  • 16 leaves Basil leaves
  • 2 tablespoons Unsalted butter
  • 1 cup Raspberry preserves
  • 1 pepper (finely minced) Chipotle peppers in adobo sauce
  • 1 tablespoon White vinegar
  • 2 tablespoons Brown sugar
  • 2 tablespoons Water

Directions

Step 1

Preheat a large skillet over medium heat.

Step 2

Lay each tortilla flat and place a slice of smoked turkey, a slice of provolone cheese, and 2 basil leaves in the center of the tortilla.

Step 3

Roll the tortilla tightly into a log, tucking in the sides as you go, to form a compact roll.

Step 4

Repeat the process with the remaining tortillas, turkey, cheese, and basil.

Step 5

Melt the butter in the preheated skillet. Once melted, add the rolls, seam-side down.

Step 6

Cook for about 2-3 minutes per side, until golden brown and crispy all around. Transfer to a plate and keep warm.

Step 7

To make the raspberry chipotle sauce, combine the raspberry preserves, minced chipotle pepper, white vinegar, brown sugar, and water in a small saucepan over medium heat.

Step 8

Stir the mixture until smooth and let it simmer for 5 minutes, stirring occasionally, until slightly thickened.

Step 9

Remove the sauce from heat and transfer to a serving bowl.

Step 10

Arrange the warm Zuni Rolls on a platter and serve with the raspberry chipotle sauce on the side for dipping.
