  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil

  • 2 medium Carrot, diced
  • 2 stalks Celery stalks, diced
  • 4 cloves Garlic, minced
  • 8 cups Chicken stock or broth
  • 1 14-ounce can Canned diced tomatoes
  • 1 cup Orzo pasta
  • 0.25 cup Fresh lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped
  • 4 pieces Lime wedges (for garnish)

Directions

Step 1

Season the chicken breasts with a pinch of salt and pepper on both sides.

Step 2

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side, until golden brown. Remove the chicken from the pot and set aside.

In the same pot, add the diced onion, carrot, and celery. Sauté for 5-6 minutes, stirring occasionally, until the vegetables are softened.
