Ingredients

  • 6 cups Fresh spinach leaves
  • 2 large Portobello mushrooms
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 2 medium Garlic cloves
  • 0.5 medium Red onion
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 cups Feta cheese (optional)
  • 2 tablespoons Toasted pine nuts (optional)

Directions

Step 1

Wash and thoroughly dry the spinach leaves. Set aside.

Step 2

Clean the portobello mushrooms by wiping them with a damp paper towel. Remove the stems and slice the caps into thin strips.

Step 3

Thinly slice the red onion and mince the garlic cloves.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the sliced portobello mushrooms to the skillet and sauté for 5-7 minutes, stirring occasionally, until they are tender and browned. Remove the mushrooms from the skillet and set aside.
