Ingredients

  • 4 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 2 units Garlic cloves, minced
  • 8 ounces Mushrooms, finely sliced (such as cremini or button)
  • 3 tablespoons All-purpose flour
  • 3 cups Beef or vegetable stock
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Soy sauce
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 0.25 cup Heavy cream (optional for a creamier gravy)
  • 1 tablespoon Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large skillet, heat the butter and olive oil over medium heat until the butter has melted and is bubbling.

Step 2

Add the chopped onion, and cook for 5-7 minutes, stirring occasionally, until the onion is softened and golden brown.

Step 3

Stir in the minced garlic, and cook for an additional 1 minute until fragrant.

Step 4

Add the sliced mushrooms to the skillet, and sauté for 8-10 minutes until they release their moisture and begin to brown.

Step 5

Reduce the heat to medium-low, sprinkle the flour over the mushrooms, and stir well to coat the mushrooms evenly. Cook for 1-2 minutes to remove the raw flour taste.

Step 6

Gradually pour in the stock while stirring constantly to avoid lumps. Raise the heat to medium and bring the mixture to a gentle simmer.

Step 7

Add the thyme leaves, soy sauce, salt, and black pepper. Stir well and let the gravy simmer for 8-10 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 8

If using heavy cream, stir it in during the last 2 minutes of simmering to create a richer, creamier gravy.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Remove the skillet from heat and let the gravy sit for a minute. Garnish with chopped parsley if desired before serving.
