Ingredients

  • 1 cup All-purpose flour
  • 1 cup Yellow cornmeal
  • 0.33 cup Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 6 tablespoons Unsalted butter, melted and cooled
  • 2 Eggs
  • 1 cup Buttermilk
  • 1 teaspoon Pure vanilla extract
  • 0.75 cup Dried cherries, roughly chopped

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease the cups with butter or non-stick spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix with a rubber spatula or wooden spoon until just combined. Do not overmix; the batter should be slightly lumpy.

Step 5

Fold in the chopped dried cherries, distributing them evenly throughout the batter.

Step 6

Using a spoon or an ice cream scoop, divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 7

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely or serve warm.

Step 9

Store any leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
