Pound chicken breasts to an even thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
Dredge the chicken breasts in all-purpose flour, shaking off the excess.
In a large skillet over medium-high heat, heat olive oil and 1 tablespoon of butter. Add the chicken and cook for 4-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
In the same skillet, melt the remaining 1 tablespoon of butter. Add sliced mushrooms and cook, stirring occasionally, until they release their moisture and turn golden brown, about 5-7 minutes.
Add minced garlic to the mushrooms and sauté until fragrant, about 1 minute.
Deglaze the skillet by adding the Marsala wine. Scrape up any browned bits from the bottom of the pan and let the wine simmer for 2-3 minutes until reduced by half.
Pour in the chicken broth and heavy cream, stirring to combine. Allow the sauce to simmer for another 3-5 minutes, thickening slightly.
Return the cooked chicken breasts to the skillet, spooning the sauce and mushrooms over the top. Cook for 2-3 minutes to warm through.
Sprinkle crumbled Gorgonzola cheese over the chicken and cover the skillet with a lid. Let it sit for a minute or two, just until the cheese starts to melt.
Garnish with freshly chopped parsley and serve immediately. Enjoy with mashed potatoes, pasta, or crusty bread on the side.
