Ingredients

  • 200 grams Pork sausage (ground or crumbled)
  • 4 pieces Large eggs
  • 2 tablespoons Milk
  • 100 grams Shredded cheddar cheese
  • 4 tablespoons Diced green chilies (canned)
  • 1 small Onion (finely diced)
  • 1 small Red bell pepper (finely diced)
  • 6 pieces Flour tortillas (small, soft)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Oil or butter (for cooking)

Directions

Step 1

Heat a large skillet over medium heat and cook the ground pork sausage until browned and cooked through, breaking it apart into small crumbles as it cooks. Remove the sausage from the pan and set aside, leaving any rendered fat in the pan for extra flavor.

Step 2

In the same skillet, add the diced onion and red bell pepper. Sauté for 3-4 minutes until softened. Stir in the diced green chilies and cook for an additional minute. Remove everything from the pan and set aside with the cooked sausage.

Step 3

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 4

Heat the oil or butter in the same skillet over medium-low heat. Pour in the egg mixture and gently scramble, stirring frequently with a spatula until the eggs are just set and fluffy. Avoid overcooking.

Step 5

Add the cooked sausage and vegetable mixture back into the skillet with the eggs. Stir to combine everything evenly.

Step 6

Sprinkle the shredded cheese over the egg and sausage mixture. Let it melt slightly, then remove the skillet from the heat.

Step 7

Warm the flour tortillas by wrapping them in a damp paper towel and microwaving them for 20-30 seconds or heating them individually in a dry skillet for a few seconds on each side.

Step 8

To assemble the burritos, spoon a portion of the egg, sausage, and cheese mixture onto the center of each tortilla. Roll the tortilla tightly, folding in the sides as you go to form a burrito shape.

Step 9

Serve immediately for the best taste. Optionally, pair with salsa, sour cream, or hot sauce for dipping.
