Ingredients

  • 1 sheet ready-made puff pastry sheet
  • 120 grams soft goat cheese
  • 250 grams cherry tomatoes
  • 1 teaspoon fresh rosemary
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt
  • 1 tablespoon all-purpose flour (for dusting)
  • 1 piece egg (beaten)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Lightly dust a clean surface with flour and roll out the puff pastry sheet into a rectangle about 1/8 inch thick.

Step 3

Place the rolled-out puff pastry onto the prepared baking sheet. Using a sharp knife, lightly score a 1-inch border around the edge of the pastry, being careful not to cut through completely. This will create a crust once baked.

Step 4

Using a fork, prick the inside of the border to prevent it from puffing excessively in the oven.

Step 5

In a small bowl, mix the goat cheese with 1 tablespoon of olive oil, garlic powder, and black pepper until smooth. Spread the mixture evenly over the inside of the scored border.

Step 6

Slice the cherry tomatoes in half and layer them cut-side up on top of the goat cheese mixture, ensuring even coverage.

Step 7

Sprinkle the tomatoes with sea salt, chopped fresh rosemary, and drizzle with the remaining olive oil.

Step 8

Brush the beaten egg along the edges of the puff pastry to encourage a golden-brown crust during baking.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden and the tomatoes are slightly roasted.

Step 10

Remove from the oven and let cool for 5 minutes before slicing. Serve warm or at room temperature.
