Ingredients

  • 12 pieces Large eggs
  • 0.5 cups Mayonnaise
  • 2 teaspoons Yellow mustard
  • 1 teaspoon McCormick chili powder
  • 0.5 teaspoons Ground cumin
  • 1 teaspoons Lime juice
  • 0.25 teaspoons Salt
  • 0.25 cups Pico de Gallo (prepared)
  • 2 tablespoons Fresh cilantro (optional, chopped)

Directions

Step 1

Place the eggs in a large saucepan and cover with water. Heat over medium-high heat until water comes to a boil. Once boiling, cover the pan, remove it from heat, and let the eggs sit for 10 minutes.

Step 2

Drain the hot water and transfer the eggs to a bowl of ice water to cool for 5 minutes. Peel the eggs and slice them in half lengthwise.

Step 3

Scoop out the yolks from the eggs and place them in a medium mixing bowl. Set the empty egg white halves on a serving platter.

Step 4

Mash the yolks with a fork until they're smooth. Stir in the mayonnaise, mustard, chili powder, cumin, lime juice, and salt. Mix until the filling is creamy and fully combined.

Step 5

Spoon or pipe the yolk mixture back into the egg white halves, dividing evenly between the halves.

Step 6

Top each deviled egg with a small dollop of prepared pico de gallo. Garnish with chopped cilantro if desired.

Step 7

Refrigerate the deviled eggs for at least 15 minutes before serving to allow the flavors to meld.

Step 8

Serve chilled and enjoy your Southwest-inspired deviled eggs!
