Ingredients

  • 75 g McCann's Steel-Cut Oats
  • 240 ml Boiling Water
  • 250 g Whole Wheat Flour
  • 100 g All-Purpose Flour
  • 40 g Brown Sugar
  • 1 tsp Salt
  • 7 g Yeast (instant or active dry)
  • 120 ml Warm Water (around 40°C / 105°F)
  • 30 g Unsalted Butter (melted)
  • 2 tbsp Honey

Directions

Step 1

Measure out 75g of McCann's steel-cut oats and place them in a large heatproof bowl.

Step 2

Pour 240ml of boiling water over the oats, stir, and let sit for 15 minutes to soften.

Step 3

In a separate bowl, combine 250g of whole wheat flour, 100g of all-purpose flour, 40g of brown sugar, and 1 tsp of salt. Mix until evenly distributed.

Step 4

In a small bowl or measuring cup, dissolve 7g of yeast in 120ml of warm water (temperature around 40°C / 105°F), and let it sit for 5 minutes until bubbly and foamy.

Add the yeast mixture to the softened oats, along with 30g of melted butter and 2 tbsp of honey. Stir well to combine.

Gradually add the dry flour mixture to the wet ingredients, stirring to combine until a sticky dough forms.

Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. If needed, dust with additional flour sparingly to prevent sticking.

Return the dough to a lightly greased bowl, cover with plastic wrap or a damp towel, and let it rise in a warm place for 1-1.5 hours or until doubled in size.

Once risen, punch down the dough and shape it into a loaf. Place the loaf in a greased 9x5-inch bread pan.

Cover the pan again and let the dough rise for another 30-45 minutes until it has doubled in size and the loaf fills the pan.

Preheat the oven to 190°C (375°F).

Bake the bread in the preheated oven for 30-35 minutes or until the top is golden brown and the loaf sounds hollow when tapped.

Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
