Ingredients

  • 0.5 pound Ground breakfast sausage
  • 4 large Eggs
  • 2 tablespoons Milk
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 tablespoons Diced green chilies (canned)
  • 4 tablespoons Diced white onion
  • 0.5 cup Shredded cheddar cheese
  • 4 pieces Flour tortillas (8-inch size)
  • 1 tablespoon Cooking oil or butter
  • 4 tablespoons Salsa (optional, for serving)

Directions

Step 1

1. Heat a large skillet over medium heat and cook the ground breakfast sausage until browned and fully cooked, about 5-6 minutes. Use a spatula to break the sausage into small crumbles. Transfer the cooked sausage to a plate lined with paper towels to drain any excess grease.

Step 2

2. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 3

3. Wipe the skillet clean and return it to medium heat. Add the cooking oil or butter to the skillet and let it melt.

Step 4

4. Pour the egg mixture into the skillet and cook, stirring gently with a spatula, until the eggs are scrambled and just set, about 2-3 minutes.

Step 5

5. Reduce the heat to low and stir in the cooked sausage, diced green chilies, and diced onion. Cook for 1-2 minutes until heated through.

Step 6

6. Sprinkle the shredded cheddar cheese over the egg and sausage mixture. Stir gently until the cheese is melted and evenly distributed.

Step 7

7. Warm the flour tortillas in the microwave or in a dry skillet for a few seconds until pliable.

Step 8

8. Spoon about 1/4 of the egg and sausage mixture onto the center of each tortilla. Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a burrito.

Step 9

9. Serve the breakfast burritos immediately with salsa on the side, if desired.
