Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) canned diced tomatoes with green chilies (e.g., Rotel)
  • 1 can (15 oz) canned black beans, drained and rinsed
  • 1 cup corn kernels, drained (canned or thawed if frozen)
  • 6 small (8-inch) flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 tablespoon olive oil
  • 1 cup (optional, for serving) sour cream
  • 1 cup (optional, for garnish) chopped lettuce
  • 1 cup (optional, for garnish) diced tomatoes
  • 0.5 cup (optional, for garnish) sliced black olives
  • 0.25 cup (optional, for garnish) chopped cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with olive oil or nonstick spray.

Step 2

In a large skillet over medium heat, add the olive oil and sauté the diced onion until soft, about 3-4 minutes. Add the minced garlic and cook for 1 more minute until fragrant.

Step 3

Add the ground beef to the skillet and cook, breaking it into crumbles, until browned and fully cooked, about 6-8 minutes. Drain any excess grease.

Step 4

Stir in the taco seasoning, canned diced tomatoes with green chilies, black beans, and corn. Mix well and let simmer for 5 minutes to combine flavors. Remove from heat.

Step 5

In the prepared casserole dish, spread a thin layer of the beef mixture on the bottom. Place two tortillas on top, tearing them if necessary to cover the layer evenly.

Step 6

Add a layer of beef mixture over the tortillas, sprinkle with 1/3 of the shredded cheese, then repeat the layering process (tortillas, beef mixture, cheese) two more times, ending with a generous sprinkle of cheese on top.

Step 7

Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 8

Remove the casserole from the oven and let it rest for 5-10 minutes before serving.

Step 9

Serve slices of the taco casserole topped with optional garnishes like sour cream, lettuce, diced tomatoes, black olives, and chopped cilantro. Enjoy!
