Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 0.5 cups Brown sugar
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 3 cups Apples (peeled, cored, and diced)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or springform pan. Line the bottom with parchment paper for easy release.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs to the butter mixture one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Toss the diced apples with lemon juice in a small bowl to prevent browning, then gently fold the apples into the wet mixture.

Step 6

Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once the cake has cooled, dust the top with powdered sugar using a fine-mesh sieve for a decorative finish.

Step 11

Slice and serve. Enjoy May's Applecake with a cup of tea or coffee!
