Ingredients

  • 2 pounds Ground beef (80% lean)
  • 1 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 medium Carrot, finely grated
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs, beaten
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup Ketchup (for meat mixture)
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Ketchup (for glaze)
  • 2 tablespoons Brown sugar
  • 1 teaspoon Dijon mustard

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, grated carrot, breadcrumbs, milk, beaten eggs, Worcestershire sauce, 1/4 cup ketchup, salt, and black pepper. Mix gently with your hands until just combined. Be careful not to overmix.

Step 3

Transfer the meat mixture to the prepared pan or shape it into a loaf on the baking sheet. Press down gently to form an even loaf shape.

Step 4

In a small bowl, whisk together 1/2 cup ketchup, brown sugar, and Dijon mustard to create the glaze. Spread the glaze evenly over the top of the meatloaf.

Step 5

Bake for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C). If the top begins to brown too quickly, you can loosely cover it with aluminum foil.

Step 6

Remove the meatloaf from the oven and let it rest for 10 minutes to allow the juices to redistribute. Slice and serve warm with your favorite sides.
