Ingredients

  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.75 cup Milk
  • 1 large Egg
  • 2 tablespoons Unsalted butter (melted)
  • 1 teaspoon Vanilla extract
  • 1 as needed for greasing Cooking spray or additional butter

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

Step 2

In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Step 3

Pour the wet ingredients into the bowl of dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or a small amount of butter.

Step 5

Pour approximately 1/4 cup of pancake batter onto the skillet for each pancake. Use the back of a spoon to slightly spread the batter, if needed.

Step 6

Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes, or until golden brown on both sides.

Step 7

Remove the cooked pancakes from the skillet and transfer them to a plate. Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 8

Serve the pancakes warm with your choice of toppings, such as syrup, fruit, whipped cream, or powdered sugar. Enjoy!
