  • 2 tablespoons chili powder
  • 1 tablespoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoons cayenne pepper (optional for heat)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 0 as desired shredded cheddar cheese (for garnish)
  • 0 as desired sour cream (for garnish)
  • 0 as desired chopped scallions or cilantro (for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the diced onion and green bell pepper to the pot, sautéing for 4-5 minutes, or until softened.

Step 3

Add the minced garlic to the pot and cook for another minute until fragrant.

Step 4

Push the vegetables to one side of the pot and add the ground beef. Cook the beef, breaking it up with a spoon, until browned and no longer pink (about 5-7 minutes).

Step 5

Drain any excess grease from the pot, if necessary.

Step 6

Stir in the tomato paste, chili powder, cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Cook for 1-2 minutes to toast the spices and develop their flavor.

Step 7

Pour in the canned diced tomatoes (with their juices) and beef broth. Stir to combine.

Step 8

Bring the mixture to a simmer, then reduce the heat to low and cover the pot. Let it simmer gently for 20 minutes, stirring occasionally.

Step 9

Add the drained and rinsed kidney beans and black beans to the pot. Stir well, cover, and continue simmering for another 15 minutes.

Step 10

Taste and adjust seasonings as needed (add more salt, pepper, or spices to suit your preference).

Step 11

Serve the chili hot, topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped scallions or cilantro, if desired.
