Ingredients

  • 1 medium head green cabbage
  • 2 large carrots
  • 1 small red onion
  • 0.5 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon celery seed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Remove the outer leaves of the cabbage, then cut it into quarters. Remove the core and thinly slice the cabbage, or use a food processor to shred it finely. Place the shredded cabbage into a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or the grating attachment on a food processor. Add the grated carrots to the bowl with the cabbage.

Step 3

Peel and thinly slice the red onion. Add the onion slices to the vegetable mixture in the bowl.

Step 4

In a medium-sized bowl, combine mayonnaise, apple cider vinegar, granulated sugar, Dijon mustard, and celery seed. Whisk the dressing until smooth.

Step 5

Season the dressing with salt and black pepper to taste, whisking to incorporate evenly.

Step 6

Pour the dressing over the cabbage, carrot, and onion mixture. Toss thoroughly to coat all the vegetables with the dressing.

Step 7

Let the slaw rest in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Step 8

Before serving, give the slaw a final stir and adjust seasoning if needed. Serve chilled as a side dish.
