Ingredients

  • 4 cups Cooked chicken (shredded)
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 4 tablespoons Unsalted butter
  • 4 tablespoons All-purpose flour
  • 2 cups Frozen mixed vegetables (thawed)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Garlic powder
  • 2 sheets Crust dough (store-bought or homemade)
  • 1 Egg (beaten for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 1-2 minutes, stirring constantly, until the roux turns light golden.

Step 3

Gradually whisk in the chicken broth, ensuring no lumps remain. Cook for 2-3 minutes until the mixture begins to thicken.

Step 4

Stir in the heavy cream, salt, pepper, onion powder, and garlic powder. Continue cooking for another 2-3 minutes until you have a smooth, creamy gravy.

Step 5

Add the shredded chicken and thawed mixed vegetables to the gravy, and stir until well combined. Remove the saucepan from heat and set aside.

Step 6

Roll out one sheet of crust dough and press it into the bottom of a 9-inch pie dish. Trim any excess dough hanging over the edges.

Step 7

Pour the chicken and vegetable filling into the crust-lined pie dish, spreading it evenly.

Step 8

Roll out the second sheet of crust dough and place it over the filling. Trim the edges and crimp them together with the bottom crust to seal.

Step 9

Cut a few slits in the top crust to allow steam to escape during baking.

Step 10

Brush the top crust with the beaten egg to give it a golden, glossy finish in the oven.

Step 11

Bake the pie in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.

Step 12

Allow the pie to cool for 5-10 minutes before slicing and serving. Enjoy!
