  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1 medium (diced) onion
  • 2 cloves (minced) garlic
  • 1 cup canned diced tomatoes
  • 1 cup tomato sauce
  • 1 cup (grated) Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so they stand upright. Place the peppers in a baking dish.

Heat olive oil in a large skillet over medium heat.

Step 4

Add the diced onion and minced garlic to the skillet. Cook until softened, about 3-4 minutes.

Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess grease.
