Ingredients

  • 3 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground nutmeg
  • 1 teaspoon Salt
  • 1 can (15 ounces) Canned pumpkin puree
  • 1 cup Vegetable oil
  • 0.67 cup Water
  • 4 Eggs
  • 1 cup Chopped walnuts (optional)
  • 1 cup Raisins or chocolate chips (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease and lightly flour two 9x5-inch loaf pans or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In a separate medium-sized bowl, mix together the canned pumpkin puree, vegetable oil, water, and eggs until smooth.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.

Step 5

If using chopped walnuts, raisins, or chocolate chips, fold them into the batter at this stage.

Step 6

Divide the batter evenly between the two prepared loaf pans, smoothing the top with a spatula.

Step 7

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaves comes out clean.

Step 8

Remove the pans from the oven and let the bread cool in the pans for 10 minutes.

Step 9

Carefully transfer the loaves to a wire rack to cool completely before slicing and serving.
