Ingredients

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cups yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 2 cloves garlic, minced
  • 1 cup dry white wine
  • 8 cups beef broth
  • 1 bay leaf
  • 4 fresh thyme sprigs
  • 1 loaf baguette, sliced into 1/2-inch thick rounds
  • 2 cups Gruyere cheese, shredded
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat.

Step 2

Add the sliced onions and cook, stirring occasionally, until softened, about 10 minutes.

Step 3

Sprinkle the onions with the granulated sugar and continue to cook, stirring frequently, until they are golden brown and caramelized, about 25-30 minutes.

Step 4

Add the minced garlic and cook for 1-2 minutes, until fragrant.

Step 5

Deglaze the pot by adding the dry white wine, scraping the bottom of the pot to loosen any browned bits. Allow the wine to reduce by half, about 3-4 minutes.

Step 6

Add the beef broth, bay leaf, and thyme sprigs. Bring the soup to a simmer and cook uncovered for 15-20 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.

Step 7

While the soup simmers, preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them in the oven for 5-7 minutes, flipping halfway through, until golden and crisp.

Step 8

Switch the oven to broil. Ladle the soup into oven-safe bowls and place a toasted baguette slice on top of each serving. Sprinkle generously with shredded Gruyere cheese.

Step 9

Place the bowls on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Step 10

Carefully remove the bowls from the oven and let them cool slightly before serving. Garnish with additional thyme sprigs if desired.
