Ingredients

  • 2 pounds boneless beef round steak
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 0.5 teaspoons garlic powder
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 14.5 ounces diced tomatoes, undrained
  • 1 cups beef broth
  • 2 teaspoons Worcestershire sauce

Directions

Step 1

Trim any excess fat from the beef round steak and cut it into 4 to 6 serving-sized portions.

Step 2

In a shallow bowl, combine the flour, salt, pepper, and garlic powder. Dredge each piece of steak in the seasoned flour, coating both sides. Shake off any excess flour.

Step 3

Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Once hot, sear the steak pieces on both sides until browned, about 2 to 3 minutes per side. Remove the steaks from the skillet and set aside.

Step 4

In the same skillet, add the sliced onion and green bell pepper. Sauté for 2 to 3 minutes until the vegetables are slightly softened.

Step 5

Return the steak pieces to the skillet, layering them over the sautéed vegetables.

Step 6

Pour the undrained diced tomatoes, beef broth, and Worcestershire sauce over the steaks and vegetables. Stir gently to combine the liquid ingredients.

Step 7

Reduce the heat to low, cover the skillet, and let the steak simmer for 1.5 to 2 hours, or until the beef is fork-tender. Stir occasionally to prevent sticking and ensure even cooking.

Step 8

Taste the gravy and adjust the seasoning with additional salt and pepper if needed.

Step 9

Serve Maudie's Swiss Steak hot over mashed potatoes, rice, or egg noodles. Enjoy!
