Ingredients

  • 4 matzo sheets
  • 4 eggs
  • 2 tablespoons unsalted butter

  • 4 cups baby spinach
  • 2 ounces cream cheese
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 yellow onion, thinly sliced
  • 0.25 cups all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons nutmeg (optional)

Directions

Step 1

Bring a large bowl of water to room temperature and break the matzo sheets into large pieces. Submerge them in the water for 1 minute or until softened, then drain and set aside.

Step 2

In a separate bowl, whisk together the eggs, whole milk, salt, and pepper. Add the softened matzo to this mixture and stir gently to coat. Let it sit for 5 minutes.

Step 3

In a skillet over medium heat, melt 1 tablespoon of butter. Add the egg-matzo mixture and cook, stirring occasionally, until the matzo is golden and fully cooked. Remove from the pan and set aside.
