  • 1 pound Large shrimp (peeled and deveined)
  • 1 cup Stone-ground grits
  • 4 cups Chicken broth
  • 0.5 cup Heavy cream
  • 1 cup Sharp cheddar cheese (shredded)
  • 6 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 cloves Garlic (minced)
  • 1 teaspoon Smoked paprika
  • 0.25 teaspoon Cayenne pepper
  • 2 tablespoons Lemon juice
  • 2 stalks Green onions (sliced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat 4 cups of chicken broth in a medium saucepan over medium-high heat. Bring to a boil.

Step 2

Slowly stir in the grits, reduce the heat to low, and cook for about 20 minutes, stirring frequently to prevent clumping.

Once the grits are tender, stir in the heavy cream, cheddar cheese, and 4 tablespoons of butter. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cover and keep warm.
