  • 4 medium (about 2 lbs) Russet potatoes

  • 0.5 teaspoons Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Chopped parsley

Directions

Step 1

Wash and peel the potatoes. Cut them into 1/2-inch cubes and place them in a large bowl of cold water to prevent browning and remove excess starch.

Peel and dice the onion into small, even pieces. Core and dice the green bell pepper into similarly sized pieces. Set aside.

Drain the potatoes and pat them dry thoroughly with a clean kitchen towel or paper towels.
