Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoons baking powder
  • 0.25 teaspoons salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 unit large egg
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon (for topping)
  • 2 tablespoons granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized mixing bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.

Step 4

Beat in the egg and vanilla extract, mixing until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Scrape down the sides of the bowl as needed.

Step 6

In a small bowl, mix the additional cinnamon and sugar reserved for topping.

Step 7

Scoop tablespoon-sized portions of dough and roll into balls using your hands. Roll each ball in the cinnamon-sugar mixture until evenly coated.

Step 8

Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 9

Bake in the preheated oven for 8–10 minutes, or until the edges are set and the centers are slightly puffy. Be careful not to overbake.

Step 10

Remove the cookies from the oven and let them cool on the baking sheets for 2–3 minutes before transferring to a wire rack to cool completely.

Step 11

Serve warm or store in an airtight container at room temperature for up to one week.
