Ingredients

  • 6 medium Red bell peppers
  • 4 tablespoons Kosher salt
  • 6 large Garlic cloves
  • 0.5 cup Olive oil
  • 1 tablespoon White vinegar

Directions

Step 1

1. Wash the red bell peppers thoroughly and dry them with a clean towel.

Step 2

2. Cut each bell pepper in half lengthwise, remove the stems, seeds, and white membranes.

Step 3

3. In a large mixing bowl or dish, layer the bell pepper halves with the kosher salt. Make sure all surfaces are generously coated with salt.

Step 4

4. Cover the bowl with plastic wrap and refrigerate for 24 hours. During this time, the salt will draw out excess moisture from the peppers.

Step 5

5. After 24 hours, remove the peppers from the bowl. Rinse them lightly under cold water to remove excess salt. Pat them dry with paper towels.

Step 6

6. Peel the garlic cloves and set them aside.

Step 7

7. In a blender or food processor, combine the drained and dried bell peppers with the garlic cloves, olive oil, and white vinegar. Blend until smooth, scraping down the sides as needed to ensure even processing.

Step 8

8. Taste the paste and adjust seasoning if necessary. If you prefer a slightly looser consistency, you can add a drizzle of additional olive oil and blend again.

Step 9

9. Transfer the paste to an airtight glass jar or container. Smooth the surface and drizzle with a thin layer of olive oil to preserve freshness.

Step 10

10. Store in the refrigerator for up to 1 month and use as a marinade, seasoning, or condiment to enhance your favorite dishes.
