Ingredients

  • 4 large Sweet potatoes
  • 3 tablespoons Unsalted butter
  • 0.25 cup Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 large Yellow onion
  • 0.5 cup Pancetta, diced
  • 1 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

Peel and cut the sweet potatoes into 2-inch chunks.

Step 2

Place the sweet potatoes in a large pot and cover them with water. Add a pinch of salt and bring the water to a boil over medium-high heat.

Step 3

Reduce the heat to medium and simmer for 15-20 minutes, or until the sweet potatoes are fork-tender. Drain and set aside.

Step 4

While the sweet potatoes are cooking, heat the olive oil in a large skillet over medium heat.

Thinly slice the yellow onion and add it to the skillet. Cook the onion, stirring occasionally, for about 10-12 minutes or until it turns golden brown and caramelized. Reduce heat if necessary to avoid burning.
