Ingredients

  • 4 medium Russet potatoes
  • 3 tablespoons Butter
  • 0.25 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 5-ounce cans Canned tuna
  • 1 large Egg
  • 0.5 cup Breadcrumbs
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Dried parsley
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Lemon juice

Directions

Step 1

Peel and dice the Russet potatoes into small chunks. Add them to a large pot, cover with water, and bring to a boil over medium-high heat. Cook for 15-20 minutes or until the potatoes are fork-tender.

Step 2

Drain the potatoes and return them to the pot. Add 2 tablespoons of butter, milk, salt, and black pepper. Mash the potatoes until smooth and creamy. Set aside to cool.

Drain the canned tuna thoroughly and transfer it to a large mixing bowl. Add the mashed potatoes, egg, breadcrumbs, garlic powder, and dried parsley. Mix until well combined.
