  • 2 pounds Russet potatoes
  • 1 tablespoon Salt
  • 4 tablespoons Unsalted butter
  • 0.5 cups Whole milk
  • 0.5 cups Sour cream
  • 0.25 cups Fresh chives
  • 0.5 teaspoons Black pepper

Directions

Step 1

Peel the russet potatoes and cut them into roughly 2-inch chunks for even cooking.

Place the potato chunks in a large pot and add enough cold water to cover them by about an inch. Add 1 tablespoon of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for about 15-20 minutes, or until they are fork-tender.

While the potatoes are cooking, chop the fresh chives and set them aside for garnish.
