Ingredients

  • 2.5 lbs Russet potatoes
  • 1 whole Garlic bulb
  • 1 tbsp Olive oil
  • 4 tbsp Butter
  • 0.5 cup Heavy cream
  • 0.25 cup Milk
  • 2 tbsp Fresh parsley
  • 1 tbsp Fresh thyme leaves
  • 2 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top of the garlic bulb to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast in the oven for 30-35 minutes, until the cloves are golden and soft.

Step 3

Peel and chop the potatoes into evenly-sized chunks. Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 4

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until fork-tender.

While the potatoes cook, mash the roasted garlic by squeezing the softened cloves out of their skins into a small bowl and mashing with a fork.
