  • 4 large Russet potatoes
  • 1 head Garlic
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.25 cups Whole milk
  • 1 large Yellow onion
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the head of garlic to expose the cloves. Drizzle 1 tablespoon of olive oil over the garlic, wrap it in aluminum foil, and roast in the oven for 30 minutes until soft and fragrant.

Meanwhile, peel and chop the potatoes into even chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
