Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Unsalted butter

  • 0.75 cup Grated Parmesan cheese
  • 3 slices Prosciutto slices
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Chopped fresh chives
  • 1 teaspoon Olive oil

Directions

Step 1

Peel the potatoes and chop them into evenly sized 1-inch cubes.

Place the potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 12-15 minutes or until they are fork-tender.
