  • 2 pounds Russet potatoes
  • 1 pound Parsnips
  • 4 tablespoons Unsalted butter

  • 0.5 cup Whole milk
  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh chives (optional)

Directions

Step 1

Peel and roughly chop the potatoes and parsnips into evenly sized chunks for even cooking.

Place the potatoes and parsnips in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.

Reduce the heat to a simmer and cook for 20-25 minutes, or until the potatoes and parsnips are fork-tender.
