Ingredients

  • 4 large Russet potatoes
  • 1 whole bulb Garlic
  • 1.5 cups Hot pepper cheese (shredded)
  • 0.25 cup Unsalted butter
  • 0.5 cup Whole milk
  • 1 teaspoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Chopped parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Remove the outer papery layers from the garlic bulb, keeping the cloves intact. Slice off the top 1/4 inch of the bulb to expose the cloves.

Step 3

Drizzle the top of the garlic bulb with olive oil, wrap it in aluminum foil, and place it on a baking sheet. Roast in the oven for 30-35 minutes, or until the cloves are soft and golden brown. Set aside to cool.

While the garlic is roasting, peel the potatoes and cut them into evenly sized chunks (about 2 inches).
