Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 4 large Garlic cloves
  • 1 teaspoon Extra virgin olive oil
  • 2 tablespoons Fresh basil leaves
  • 2 tablespoons Fresh chives
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and cut the potatoes into evenly sized chunks (about 1-inch pieces).

Step 2

Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt.

Step 3

Bring the water to a boil over medium-high heat. Reduce the heat to a simmer and cook the potatoes for 20-25 minutes, or until they are fork-tender.

While the potatoes are cooking, preheat the oven to 375°F (190°C).

Step 5

Place the unpeeled garlic cloves on a piece of aluminum foil. Drizzle with olive oil and wrap tightly. Roast in the oven for 20 minutes, or until soft and fragrant.
