Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 minced Garlic cloves
  • 0.5 cups Whole milk
  • 4 ounces Goat cheese
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and cut the potatoes into 2-inch chunks. Place them in a large pot and cover with cold water. Add a pinch of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.

While the potatoes are cooking, prepare the caramelized onions. Peel and thinly slice the yellow onion.
