Ingredients

  • 2 pounds Russet or Yukon Gold potatoes
  • 6 tablespoons Unsalted butter
  • 0.5 cups Heavy cream or milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 3 medium Yellow onions
  • 2 tablespoons Olive oil
  • 1 teaspoon Granulated sugar (optional)
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into 2-inch chunks. Rinse them under cold water to remove excess starch.

Step 2

Place the potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt and bring the water to a boil over medium-high heat.

Step 3

Reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes cook, peel and slice the onions thinly.

Step 5

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onions and stir to coat them in the oil.

Step 6

Cook the onions, stirring occasionally, for 25-30 minutes, or until they are deeply golden and caramelized. If the onions start to stick, add 1-2 teaspoons of water to deglaze the pan.

Step 7

Optional: Add 1 teaspoon of sugar to the onions halfway through cooking to enhance their sweetness.

Step 8

Drain the cooked potatoes and return them to the pot. Let them sit for 1-2 minutes to allow excess moisture to evaporate.

Step 9

Add the butter, heavy cream, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the potatoes.

Step 10

Mash the potatoes using a potato masher or electric mixer until smooth and creamy. Adjust the seasoning as needed.

Step 11

Transfer the mashed potatoes to a serving dish and top with the caramelized onions.

Step 12

Optional: Sprinkle chopped fresh parsley over the dish for a pop of color and flavor.

Step 13

Serve warm and enjoy!
