Ingredients

  • 2 pounds Russet potatoes
  • 2 medium Yellow onion
  • 0.25 cup Extra virgin olive oil
  • 0.5 cup Unsweetened plant-based milk (or regular milk)
  • 2 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the russet potatoes and cut them into 1-2 inch chunks. Place the chunks in a large pot, cover them with water, and add 1 teaspoon of salt.

Step 2

Bring the pot of water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes or until they are fork-tender.

Step 3

While the potatoes are cooking, peel and thinly slice the yellow onions. Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the onions to the skillet. Cook, stirring occasionally, for 20-25 minutes until the onions are golden brown and caramelized. Lower the heat if the onions begin to brown too quickly.

Step 5

When the potatoes are tender, drain them in a colander and return them to the pot. Allow them to sit for 1-2 minutes to release steam.

Step 6

Mash the potatoes using a potato masher or a ricer until smooth. Gradually mix in the plant-based milk (or regular milk), remaining olive oil, 1 teaspoon of salt, and black pepper.

Step 7

Fold the caramelized onions into the mashed potatoes, reserving a small amount for garnish if desired.

Step 8

Taste and adjust seasoning with additional salt and pepper if needed.

Step 9

Serve the mashed potatoes warm, garnished with the reserved caramelized onions and a sprinkle of chopped fresh parsley if using.
