Ingredients

  • 2 pounds Yukon Gold potatoes

  • 0.5 cups Sun-dried tomatoes (packed in oil)
  • 3 whole Garlic cloves
  • 0.25 cups Milk (optional, for extra creaminess)
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and chop the Yukon Gold potatoes into even-sized chunks to ensure they cook evenly.

Step 2

Place the chopped potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

Bring the pot to a boil over medium-high heat. Reduce the heat and let the potatoes simmer for 15-20 minutes, or until they are fork-tender.
