Ingredients

  • 2 pounds Russet potatoes (or Yukon Gold potatoes)
  • 6 tablespoons Unsalted butter
  • 0.5 cups Heavy cream (or whole milk)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 4 cloves Garlic cloves (optional for garlic mashed potatoes)
  • 2 tablespoons Fresh parsley, chopped (for garlic and herb mashed potatoes)
  • 2 tablespoons Fresh chives, chopped (for garlic and herb mashed potatoes)
  • 1 teaspoon Olive oil (for roasting garlic, optional)

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks, about 2 inches in size.

Step 2

Place the potato chunks into a large pot and cover them with cold water. Add a generous pinch of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes or until they are fork-tender.

Step 4

If making garlic mashed potatoes, peel the garlic cloves. Optionally, roast the garlic by drizzling it with olive oil, wrapping it in foil, and baking it at 375°F (190°C) for 25-30 minutes until soft and caramelized. If using raw garlic, mince it finely.

Step 5

Drain the cooked potatoes and return them to the pot. Let them sit for 2-3 minutes to allow excess steam to escape.

Step 6

Add the unsalted butter, heavy cream (or whole milk), salt, and black pepper to the pot. Mash the potatoes using a potato masher or hand mixer, mixing until smooth and creamy.

Step 7

For garlic mashed potatoes, add the roasted or raw garlic to the potatoes and mash thoroughly to incorporate the garlic flavor.

Step 8

For garlic and herb mashed potatoes, fold in the chopped parsley and chives after mashing for a fresh, herbaceous flavor.

Step 9

Taste and adjust seasoning with additional salt and pepper if needed.

Step 10

Serve hot as a side dish, garnished with extra herbs if desired.
