Ingredients

  • 6 medium Russet potatoes
  • 6 cups Spinach
  • 4 tablespoons Unsalted butter
  • 3 cloves Garlic cloves (minced)
  • 1 cup Whole milk
  • 1 cup Sour cream
  • 1.5 cups Shredded cheddar cheese
  • 0.5 cup Parmesan cheese (grated)
  • 2 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.5 cup Panko breadcrumbs (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Peel the potatoes and cut them into large chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 15-18 minutes, or until the potatoes are fork-tender. Drain and return to the pot.

Step 3

While the potatoes cook, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Add the spinach and cook until wilted, about 3-4 minutes. Remove from heat and set aside.
