Ingredients

  • 6 medium Potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Milk
  • 2 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Yellow onion
  • 2 minced Garlic cloves
  • 1 medium, diced Carrot
  • 1 medium, diced Bell pepper
  • 1 medium, diced Zucchini
  • 14 ounces Canned crushed tomatoes
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 cup Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Peel and chop the potatoes into even chunks. Add them to a large pot of salted water and bring to a boil. Cook for 15-20 minutes until tender.

Step 2

Drain the cooked potatoes and return them to the pot. Add 4 tablespoons of butter, 1/2 cup of milk, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mash until smooth. Set aside.

Preheat your oven to 375°F (190°C).

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
