Ingredients

  • 4 large Russet potatoes
  • 6 tablespoons Unsalted butter
  • 1.5 cups Heavy cream
  • 4 cloves Garlic
  • 1 large Yellow onion
  • 1 tablespoon Olive oil
  • 1 cup Gruyère cheese
  • 0.5 cup Parmesan cheese
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with butter or non-stick spray.

Step 2

Peel the potatoes and cut them into 2-inch chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until the potatoes are fork-tender. Drain and set aside.

Step 3

While the potatoes cook, thinly slice the onion. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and cook, stirring often, for 10-12 minutes until caramelized. Set aside.

Step 4
