Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 1 pound Ground beef
  • 2 cups Frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 0.25 cup Ketchup
  • 0.5 cup Beef broth
  • 2 tablespoons All-purpose flour
  • 1 cup Shredded cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and dice the potatoes into small, even chunks. Place them in a pot of cold, salted water and bring to a boil over medium-high heat. Cook until the potatoes are fork-tender, about 15 minutes.

Step 2

While the potatoes are cooking, heat a large skillet over medium heat. Add the ground beef and cook, breaking it up into small pieces, until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

Step 3

Add the frozen mixed vegetables to the skillet with the cooked beef. Stir and cook for 2-3 minutes until the vegetables begin to thaw.

Step 4

Stir in the ketchup, beef broth, and flour. Mix until well combined and cook for another 2-3 minutes, allowing the sauce to slightly thicken. Remove from heat.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

Drain the cooked potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Step 7

In a greased 9x9-inch baking dish, spread the beef and vegetable mixture evenly on the bottom. Layer the mashed potatoes on top, spreading them gently to cover the filling completely.

Step 8

Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.

Step 9

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Step 10

Allow the dish to cool slightly before serving. Scoop into bowls and serve with a smile for a kid-friendly dinner!
