Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.25 cups Sour cream
  • 2 cloves Garlic cloves, minced
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Fresh chives, chopped (optional)

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks (about 2 inches).

Step 2

Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.

Step 3

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes are cooking, in a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Remove the saucepan from heat and stir in the heavy cream. Set aside.

Step 6

Once the potatoes are cooked, drain them in a colander and return them to the warm pot.

Step 7

Mash the potatoes using a potato masher or ricer until smooth and fluffy.

Step 8

Slowly pour in the garlic-infused cream and butter mixture, stirring gently to incorporate.

Step 9

Add the sour cream, salt, and black pepper. Continue mixing until everything is well combined and the potatoes are creamy.

Step 10

Taste and adjust seasoning as needed. If desired, garnish with chopped chives before serving.

Step 11

Serve warm as a delicious side dish and enjoy!
