Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Unsweetened cocoa powder
  • 1.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter
  • 1.25 cups Granulated sugar
  • 1 cups Mashed potatoes (plain, no seasoning or butter)
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 0.5 cups Milk
  • 0.75 cups Semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the unsalted butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the mashed potatoes to the butter mixture and mix until well combined. The mashed potatoes should be smooth with no lumps.

Step 5

Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.

Step 6

Gradually add the dry ingredients to the wet ingredients in thirds, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined after each addition. Do not overmix.

Step 7

Fold in the semi-sweet chocolate chips gently with a spatula.

Step 8

Pour the batter into the prepared cake pan, spreading it evenly with a spatula.

Step 9

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 10

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before serving.

Step 11

Optionally, dust the top with powdered sugar, drizzle with chocolate ganache, or frost with your favorite icing. Enjoy!
