  • 3 large Russet potatoes
  • 3 large Sweet potatoes

  • 0.5 cups Heavy cream

  • 1 cup Breadcrumbs
  • 0.5 cups Parmesan cheese
  • 1 cup Cheddar cheese
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and chop the russet potatoes and sweet potatoes into roughly 1-inch cubes.

Step 2

Place the potatoes and sweet potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.
